Roasted Potatoes
Ingredients
- 1 pound of potatoes, cut into 1/2-inch cubes
- 3 cloves garlic, halved
- 1 Tablespoon Herbes de Provence
- Olive oil
- Salt and pepper
Directions
- Heat the oven to 425° F.
- Place the potatoes and garlic in a large pot and cover with water.
- Season generously with salt. Bring to a boil and leave for 10 minutes.
- Drain, and pour onto a baking sheet, or divide between two baking
- dishes. Drizzle with olive oil and sprinkle with seasonings. Stir to
- coat, then spread into a single layer. Bake 45 minutes, stirring once
- halfway through.
